At a higher price they would have been 4 or 3 stars, but for $50 this is an insane deal. The steel is pretty good quality. It almost seems like it's hardened VG-10 but I think they would advertise that if it were so I'm guessing it's a cheaper stainless steel that just comes harder without being treated though I'm just speculating based on price. Anyways they're flat ground, take an edge easily, and hold it reasonably well. Nicer knives would certainly hold an edge longer but I'm pretty happy with them. So, overall, this set has a variety of useful knives and a really big rubberwood holder. The knives felt weighted differently than I was used to and I had to adjust to handling them, especially the two largest knives, when chopping. Slicing is easy with any knife except the bread knife. These knives sharpen easily to a good edge but they dull pretty quickly, in my experience. Lastly, the paring knife snapped at the shank when I was using it to insert garlic cloves into a roast after sixteen months since purchase. Replacement window closed four months ago so I am out a paring until I buy a new
