I'm not a butcher just someone who grills and smokes a lot of meats. I chose this because of the no slip grip that along with sharpness was #1 priority to me. The knife came sharp right out the box and I used it on 65lbs of meat for it's first test run no problem still just as sharp. The curve on the tip of the knife really is great at those hard to reach area's. The blade isn't flimsy and the thickness of it is perfect. Very sharp, very well made.

Knife has a very thick spine, not for delicate cuts but i love it as a grilling or camping knife. Wooden handle is comfortable but i recommend oiling it or staining it since it is unprocessed wood. I even ended up sanding mine down a little. Sheath is fine, not the greatest quality but i haven't had any problems with it.
