As sharp as any metal knife I've used, and so far has remained sharp thru frequent use and trips thru the dish washer. My only negative is that the handle is smooth plastic and when I'm using it on leftover meats like turkey, it tends to slip in my hand and I have to frequently stop to wash/wipe it to maintain a grip. They could make this better by molding a texture into the handle while they are blow molding it. Although the bright colors really aren't necessary, they do stand out in the drawer and makes them easy to pick out quickly. Although they call it a 6 piece set, the peeler really doe
